Authentic Laos Tapioca Pudding With Bananas

  • 1. 1 cup Warm Water.
  • 2. 4 cups Water.
  • 3. 3 tablespoons Tapioca.
  • 4. 14 oz jar Coconut Milk.
  • 5. 2 tablespoons Sugar.
  • 6. 3 Cups Banana.
  • 7. 4 cups Water.
  • 8. To taste Salt.

Directions:

  • 1. In a bowl of warm water, add tapioca pearls and allow them to soak for 20 minutes.
  • 2. Prepare bananas by peeling them and cutting them into ½ inch slices.
  • 3. Set the slices asideOn a stove, pour in 4 cups of water and bring it to a boil.
  • 4. Add in the banana slices.
  • 5. After 20 minutes, drain the tapioca pearls in cold water to allow the pearls to separate from each other.
  • 6. Add the tapioca pearls into the the pot.
  • 7. Allow to simmer for 3 minutes or until the tapioca pearls turn clear.
  • 8. Next, add in sugar and pour in the coconut cream.
  • 9. Stir the ingredients gently for 3 minutes to incorporate the flavors.
  • 10. Add salt to taste.
