Authentic Laos Tapioca Pudding With Bananas

- 1. 1 cup Warm Water.
- 2. 4 cups Water.
- 3. 3 tablespoons Tapioca.
- 4. 14 oz jar Coconut Milk.
- 5. 2 tablespoons Sugar.
- 6. 3 Cups Banana.
- 7. 4 cups Water.
- 8. To taste Salt.
Directions:
- 1. In a bowl of warm water, add tapioca pearls and allow them to soak for 20 minutes.
- 2. Prepare bananas by peeling them and cutting them into ½ inch slices.
- 3. Set the slices asideOn a stove, pour in 4 cups of water and bring it to a boil.
- 4. Add in the banana slices.
- 5. After 20 minutes, drain the tapioca pearls in cold water to allow the pearls to separate from each other.
- 6. Add the tapioca pearls into the the pot.
- 7. Allow to simmer for 3 minutes or until the tapioca pearls turn clear.
- 8. Next, add in sugar and pour in the coconut cream.
- 9. Stir the ingredients gently for 3 minutes to incorporate the flavors.
- 10. Add salt to taste.
